I saw a study that proved that people who use a smaller plate for their meals actually eat less. I try to do that, use a salad plate instead of a dinner plate. Drinking lots of water is very important, more than just 2 glasses a day. One other suggestion I've seen is to make it a point never to eat except when sitting down at a table. I think this goes along with what she's saying about enjoying food. Another suggestion I've seen is to eat a small healthful snack about 30 minutes before a meal, especially if you are very hungry. It will keep you from overeating at the meal.

It might also be mentioned that there are likely other factors contributing to this...though I'm not in any way trying to shut down the concept of their diet being a large part of the overall picture as well:

The French, and Europeans in general, lead healthier lives than the English and Americans, walking and biking being more conducive. Paris even has a "bike sharing" program!.
The French also get 5 weeks of vacation per year, as well as 2 weeks of "reduced work time" according to Wikipedia. In the US, there is no minimum annual vacation law, it's completley up to your employer and getting 4 weeks is usually reserved for employees who've been with a company for 10 years or more.

I'm sure other factors could be found as well, but mixing these three things makes France seem so much better than even our mighty Pittsburgh Steelers!
